In modern workshops for the production of cottage cheese, an OTD brand cooler is used to cool the finished product. The disadvantage of this device is insufficient productivity, and with an increase in the speed of the displacement drum, the curd is not cooled to the required temperature. In this regard, the article proposes a modernized cooler in which the displacement drums are hollow, inside which a hollow shaft is installed, connected by a nozzle to the displacement drum jacket. The design of the hollow shaft provides two separate flows, respectively, for the entry of refrigerant into the jacket of the drum and exit from it. Thus, in the modernized cooler, two-way cooling of the cottage cheese takes place: from the cylinder side and from the displacement drum. The clearance between the drum and cylinder is reduced to 8 mm. The rotational speed of the drums is 30 rpm. All this allowed to increase the cooler productivity up to 780 kg / h. The proposed modernized curd cooler allows you to increase productivity and intensify the process of cooling the curd.
