Morphometric determinants and chemical structure in yacon plants during their introduction in Middle Ural

The authors studied the phonological and physiological peculiarities, structure of the underground organs, and also they evaluated the productivity, growth dynamics of superterranean organs at the ontogeny and accumulation of fructose containing carbohydrates in roots tubers of yacon (Polymnia sonchifolia Poepp & Endl.) during their introduction in Middle Ural. It was established, that the productivity of yacon roots tubers at the favorable conditions may be reach the value of 40 ton of damp mass per hectare, that is 4 ton of dry mass per hectare, respectively. The content of fructose containing carbohydrates at the end of vegetation period is 45-55 % of air-dry mass of edible roots. Consequently, yacon plants as well as topinambour plants can be fructose sources and growing in Middle Ural conditions.
