With the adoption of the law "On organic products", as well as with the state regulation and financial support of agricultural producers, the market of organic products in Russia has become one of the drivers of the agrarian sector development. A distinctive feature of organic agricultural products is its high marginality, which becomes a new challenge for representatives of the agricultural business. The article touches upon the issues of relevance of organic agricultural products, presents the principals of the normative and technical regulation of the market of organic products in our country. A promising area of research under the increase in the production of domestically produced meat and milk is a problem of improving the methods of complex evaluation and intravital formation of the quality of the organic raw materials obtained. The solution of the problem is closely connected with the elimination of negative stress factors on animals. On the basis of numerous studies, the organic complex method of evaluation and intravital formation of the quality of the meat and dairy products was obtained. The method was based on the use of reflex methods of stimulation of adaptive capacity of animals to stress factors in the recent production conditions. The complex method offered includes a set of practices that are protected by patents of the Russian Federation for invention of technical and technological methods which ensure the technologically correct preparation of cattle and swine for slaughter, including transportation, intravital evaluation and regulation of the meat and milk quality. The application of the developed organic complex method allows to minimize the use of medical preparations and to obtain organic products of animal husbandry.
