Some questions of making a traditional drink - kumis in Kazakhstan

Traditional fermented milk product of nomads is koumiss. The drink is obtained from mare's milk. In the process of fermentation, a drink is obtained that has a number of medicinal properties and perfectly quenches thirst in the summer. The product contains vitamins A and E, C and B, phosphorus, calcium, and other trace elements, which are 10 times more than in cow's milk. This product contains 2 times less lactose, due to which mare's milk is as close as possible to female milk. As noted by many researchers, there are a number of problems in the production of kumis: industrial production requires equipment that meets European standards; the products must be bottled in glass containers; difficulties with machine milking; limited shelf life; high cost of the product.
