This article investigates one of the topical issues in the field of animal husbandry-the quality of milk and dairy products. The main indicator that determines the grade of milk is the content of somatic cells. The paper presents the characteristics of checking the level of somatic cells in milk on the example of the dairy complex-JSC im. Lenin Tsimlyansky district. Also, the main factors that determine the level of somatic cells in milk are considered.
