About commemorative dishes of the Tatars of Omsk region of Znamenskoye and Tara district

The work is based on the field data of 2014 and 2016. In the first part of the article we examine the commemortion dish of dough - yupka. The paper outlined the whole area with similar dough products for commemoration in the Omsk and the Tyumen regions. Despite the fact that in several places they retained the tradition to cook it is relict. Currently, for the commemoration the soup with meat and noodles, fruits and dried fruits are served. These dishes and products have become obligatory for the commemoration as a result of living standards rising in the second half of XX century. The composition of the dough products (cakes, firewood) is a diverse set of sustainable dishes. A must dish of dough at the Tatars wake are unleavened pancakes. The first assumption is that begs to Tatar pancakes as funeral dishes, in that they were taken from the Russian population. But this question requires further study.
