The article is devoted to the food security of the countries and regions. It is argued that to measure with high precision the degree of food security and nutritional substances are virtually impossible. It is important not only food, but also its membership, compliance order or other religious and cultural traditions, the influence on human consciousness, etc. There is ambiguous meaning of the concept of "food security". Provides a critical assessment of the methodology for calculating the so-called food security index. The author believes that it in fact does not take into account the factor of food independence of states and exaggerated the effectiveness of institutional conditions in the area of food security. Attention is drawn to the different approaches to determining the extent of food security of countries and regions. One of them is related to local average calorie calculation nutritious diet. In this case, calorie content of basic agricultural cultures and basic animal products per capita.
