Exception of synthetic additives from food is a trend in food industry. This paper presents the rationale for the use of extracts from berries of viburnum pine, Chinese magnolia vine, green tea and reindeer antlers as a source of biologically active substances to enrich the caramel with the complete exclusion of synthetic dyes and flavorings.
