Culinary traditions of Krasnodar region as a basis for creating offers in the segment of gastronomic tourism: an overview

The article outlines development prospects of gastronomic tourism in Krasnodar region in the framework of the project "Gastronomic map of Russia". The main goal is to evaluate the existing tourist infrastructure of the region from the point of view of revealing its potential for the developing new forms and types of organized tourism. The article delineates the potential of gastronomic resources of the territory, namely describes the capabilities of the most powerful and unique enterprises and organizations of Kuban. Using the methods of observation, comparison, systematization the authors reveal that the diversity of culinary traditions in Kuban can be an effective way of attracting tourists to the region, the basis for a gastronomic tour, passing through the territories of four districts of Krasnodar territory: Anapa district (Vityazevo village), Novorossiysk district (Abrau village), the Crimea district (Fadeevo village), Temryuk district (Taman village) and the city-resort Anapa, constructed in such a way that each day is dedicated to a specific culinary area. Ethnographic complex "Ataman " can be regarded a center of the program, which hosts a variety of workshops, tours and ceremonies, culinary festivals, BBQ, bacon, fish and crayfish dumplings, the Kuban borscht, watermelon and traditional cakes. The enterprises of the food industry of Vityazevo village and “Old Greek's wine farmstead" of Valery Aslanov (Aslanidis) can help implementing the program aspects related to the national cuisine of Greece. Tourists can taste Circassian cuisine and feel local flavor on the way to the coast, in the village of Fadeevo in Crimean district, were is the ethnic center "Circassian village". The center of wine tourism Abrau-Durso could became enogastronomical component of the tour. The authors indicate the potential of gastronomic resources of the territory, among which are the capabilities of the most powerful and unique of enterprises and organizations of Kuban. The possibilities of the food industry and the ethnographic complexes of the region described in the article could became a great means of bringing tourist flows in Krasnodar region, to create base for the further development of this direction, to make gastronomic tourism more diverse.
