The assessment of antioxidatic potential of meat products

The interests of scientists to natural antioxidants have recently increased. The numerous researches confirm that antioxidants can protect the person from dangerous diseases and early ageing. The programs of antioxidant protection of the population and programs of functional nutrition have been developed in different countries. The total amount of antioxidants in 6 kinds of meat from different farms and 30 meat products was determined in the present paper. The measurements were made by amperometric method. The largest amount of water-soluble antioxidants was estimated in the mutton sample (15,81 mg/g), the smallest - in the rabbit sample (4,47 mg/g). It was found that the amount of antioxidants in beef sample was less about 40% in winter that in autumn. The different kinds of sausages and different kinds of cold meat have been analyzed. It is concluded that the amount of antioxidants depends on technological processing. The largest amount of antioxidants have been found in smoked and raw smoked products, the smallest amount - in boiled sausages.
