Evaluation of the dynamics of lactose processing by yeast of the genus Kluyveromyces based on the Benedict method

The present study presents the results of testing the possibility of using the modified Benedict's method for quantitative determination of lactose in milk serum. The relevance of the study is due to the use of lactose-processing ability of yeasts of the genus Kluyveromyces for processing lactose-containing waste at milk processing plants. In the course of the study, the method used showed its effectiveness in determining the dynamics of lactose recycling. The method can be recommended for use in non-production facilities due to its simplicity, low cost and safety.
