A methodological approach to assessing the level of accessibility of food for the population that has developed in the domestic scientific environment is described. The assessment of the level of availability of milk and dairy products for the population of the region (for example, the Altai Territory). The level of consumption of milk and milk products by the region is estimated. The economic factors of ensuring the availability of food for the population are characterized.
