Article is devoted to formation of model of complex performance appraisal on the example of Zotman Pizza Pie restaurant. Estimation of professional competences of waiters is carried out by means of two methods: "the secret guest" and expert assessment in the set parameters. The received results of estimates has allowed to inform workers on the relative level of their work in the organization, to show their strong and weaknesses, to channelize to improvement. Besides, results of estimates can be used for formation of system of motivation of work.
