This article provides an analysis of the results of a study on the selection of microbiological cultures for a consortium based on their biochemical characteristics. The study noted that the yeast Zygosaccharomyces kombuchaensis exhibits fructophilic behavior, consuming fructose faster than glucose when both carbon sources are present in the medium. And Gluconacetobacter xylinus No. 3, in turn, actively produce cellulose mass and acetic acid, while showing growth in the presence of 0.35% acetic acid and does not form a brown pigment in the process of vital activity on a glucose / yeast extract medium.
