Optimization of cultivation process of yeast Saccharomyces cerevisiae to increase alcohol dehydrogenase and aldehyde dehydrogenase output

The yeast Saccharomyces cerevisiae was cultured on whey with making additional sources of nitrogen, phosphorus and glucose. The high biosynthetic capacity of yeast grown on whey, enriched with glucose is shown in the article. In this case, the specific growth rate of yeast is equal to 0.017 h-1, biomass yield is 1.25 g/g, biomass accumulation is 36.50 g/l. Parameters to ensure the maximum yield of alcohol dehydrogenase and aldehyde dehydrogenase are defined: cultivation temperature is 30°C, cultivation duration is 18 h. and the ratio of the culture fluid to the air volume is (Vcj/Vav) 1:4. The specific activity of alcohol dehydrogenase is 20 U/mg protein and aldehyde dehydrogenase is 0.30 U/mg protein, using all sources of nutrients.
