Oriental calibration dependence for food additives-regulators of enzymatic activity orto-diphenoloxidase

The kinetic parameters of the catalytic activity of ortho-diphenol oxidase in four systems are determined: with the addition of citric acid, sodium acetate, sodium carbonate and without additives. Straightened kinetic dependencies are calculated and constructed for the four systems studied. The following parameters are calculated: Michaelis constants, catalytic constants, and maximum rates of the enzymatic reaction. A diagrammatic representation of the data on enzyme kinetics is obtained. The represetation can serve as an approximate gauge dependence for the selection of food additives.
