This article studies the features of the development of the dairy products market in the Sverdlovsk region. The high social importance of this market for ensuring food security of the region determined the choice of this market as the object of research. As a result of the empirical research the following features of demand were identified: inelastic demand for dairy products on the part of retail chains; unsatisfied final demand for dairy products; the predominance of object demand on the part of retail chains forms a special type of market - the ‘buyer’ market, in which the volume, range and price of products are determined by the wholesale trade intermediary. On the supply side, the following significant characteristics were identified: ‘multi-product’ determines high market barriers, and the distribution of producers into groups by forms of capital determines different access to resources. The existing structure is characterized by a low level of competition, and the market itself has the features of a ‘quasi-market’.
