The characteristics of the composition and physicochemical parameters of honey are given, which varies depending on various factors, such as climatic parameters during the honey harvest period, features of natural and geographical zones and the botanical composition of honey plants. The organoleptic, physicochemical and pollen characteristics of monofloral and polyfloral types of honey of the Omsk region, obtained in territories distinguished by natural features and agricultural purposes, are presented. The samples were studied using the generally accepted methods. The results of organoleptic and palynological analysis of honey are described. It is noted that natural honey has a number of differences, which are determined by the characteristics of honey plants growing in a given area. Melissopalinological analysis has established that predominantly polyfloral honey is collected on the territory of the Omsk Irtysh region. Monofloral honeys on the territory of the Omsk region are represented by buckwheat, sunflower, sweet clover, rapeseed and honey from plants of the cruciferous family, in some years it is possible to obtain linden honey. Palynological analysis has established that pollen grains of other honey plants are usually present in the composition of monofloral honeys. Buckwheat and rapeseed honey collected in the southern part of the Omsk region contained pollen belonging to eleven families. Sunflower honey contained pollen from plants belonging to nine families; sweet clover, sainfoin and linden - from thirteen, dandelion - from ten, honey from cruciferous - from twelve families. In polyfloral honey collected on the territory of the Omsk region, pollen belonging to 14-18 plant families was identified. The results of the studies confirm that melissopalinological analysis is necessary in the implementation of veterinary and sanitary examination of natural honey and confirmation of its botanical and geographical origin.
