Promising directions for innovative processes development in the dairy industry

The essence of the innovation process from the standpoint of agro-industrial production is revealed. The main elements of the innovation process structure are outlined, its forms are characterized. The stages of the innovation process implementation are identified. The importance of intensifying innovative activity in milk processing is substantiated. The prerequisites for the introduction of innovations in the dairy industry are established: lack of animal protein in the diet of the population; poor quality of dairy products made by individual producers; high biological value of raw milk; low consumption of dairy products in the country. The priority directions of innovative dairy industry development are systematized. The content of innovations to increase economic efficiency of dairy production in the Russian Federation and competitiveness of domestic producers in the processed milk market is disclosed: production of natural environmentally friendly products, balanced in composition and content of individual components, subjected to minimal processing during the manufacturing process and enriched with vitamins and beneficial enzymes; the use of pectin substances as natural emulsifiers and stabilizers; increasing the use of secondary milk protein-carbohydrate raw materials; improving the quality and safety of packaging materials.
