Prospects for biomodification of waste from cutting the blue crab Paralithodes platypus

The results of experimental studies of the chemical composition of waste from the cutting of the blue crab Paralithodes platypus obtained in the production of food products are presented. The waste composition included carapace, abdomen, remnants of muscle tissue, gills, films, and viscera, including crab hepatopancreas. In the studied secondary raw materials, the general chemical composition was determined, confirming the significant content of proteins (14.72 ± 0.05), the biological value of which was confirmed by the results of amino acid analysis. The relative biological value (42%) of waste from the blue crab cutting, their proteolytic activity (63,52 PA un/см3), which cause the enzymatic hydrolysis of the waste under study at the expense of their own enzymes were determined. Experimentally obtained data confirm the prospects of biomodification of waste from cutting blue crab for the production biologically valuable products.
