The article summarizes the key findings obtained under the author’s supervision of the biotechnological potential of probiotic microorganisms for biologically active additives production - synbiotics, exopolysaccharides, improving the rheological properties of biological products and preparations for the degradation of cholesterol. The prospects for the use of the unique features of the metabolism of probiotic microorganisms in various fields of biotechnology are considered.
