Development Prospects and Features of Gastronomic Tourism in the North Caucasus

The article reviews and studies the current state and prospects of gastronomic tourism development in the North Caucasus, analyzes its peculiarities and unique fea-tures due to the cultural and historical heritage of the region. Gastrotourism is one of the youngest varieties of tourism. Gastronomic tourism is seen as an effective tool for sustainable development of local communities and preservation of traditional culinary practices. North Caucasus Federal District (North Caucasus) is among the promising tour-ism regions, it is a unique region of Russia with a rich history. Its geographical location has played a significant role in the formation of a distinctive Caucasian cuisine - it origi-nated at the junction of Mediterranean and Middle Eastern cuisine and adopted some elements of Armenian, Azerbaijani and Georgian cooking. The increased interest in “clean” nutrition has also affected the demand for Caucasian cuisine. Natural ingredients and predominantly balanced dishes can satisfy this demand. The author notes the exist-ing problems and proposes ways to solve them. Today the main competitor of the North Caucasian Federal District is the Southern Federal District. The main advantage in this matter is a more developed infrastructure and a high level of service. This is largely due to the fact that the North Caucasus began its active development in the last five years. Despite this, the region has shown its high potential and its importance in the market is likely to grow every year.
