Prospects for Regional Production of Canned Fruit (Exemplified by the Republic of Crimea)

A study of the resource potential of the Republic of Crimea and the state of the material and technical base for the production of canned fruit is presented. The purpose of the conducted research is to determine possible directions and substantiate the prospects for the development of the production of canned fruit and berries in the region. It was concluded that a well-developed and constantly increasing raw material base in the republic was developed. The proximity of processing facilities to collection points minimizes losses, eliminates the need for temporary storage during transportation, and ensures that fresh produce reaches the factory. At the same time, the share of products of regional manufacturers in the Crimean market is insignificant. Problems connected with material and technical support of the processing industry were identified, which include the lack of modern equipment, as well as the lack of areas for fruit stores, which form the possibility of year-round processing of raw fruit. The dependence on the supply of containers and packaging materials from other regions of the Russian Federation and its negative impact on the cost of finished products were shown. Promising areas are defined: expansion of the range and focusing on the uniqueness of products. It is proposed to expand the range of canned fruit products from regional manufacturers by developing and organizing the output of new assortment lines: canned fruit in syrup and canned food for children, the production of which can be organized on the basis of existing enterprises using regional raw materials. The uniqueness of the suggestion can be formed by the use of rare fruits, such as jujube, persimmon, feijoa, and sea buckthorn, as well as cultivated wild species, for example, dogwood, blackberries, and irga. The rationality of the proposed project is justified by calculation, for example, by an existing cannery. Authors’ contribution.
