Obtaining biologically valuable extracts based on secondary raw material of animal origin

The development of beverages of functional orientation with the use of extracts from plant raw materials containing a wide range of biologically active components remains the most promising direction for the creation of healthy food products. Of particular interest is the production ofprotein-containing beverages, while along with traditional milk drinks, products based on blood plasma from slaughter animals deserve special attention. This article contains the results of a study of the possibility of using hydrolyzed blood plasma as an extractant in the preparation of bases for the functional drinks production. The regimes for extracting and the amount of dry matter transferred from plant material to the extract are specified. The organoleptic characteristics of the obtained bases for the production of beverages, their amino acid, vitamin and mineral compositions were studied, and the relative biological value was estimated.
