Losses in the fishing sector in the context of sustainable development: ensuring quality and safety as factors of reduction

The article presents the results of research and the main conclusions on the problem of the formation of losses and waste in the fish sector. The contribution of the fish sector to sustainable development could be much greater, but a number of reasons, among which there are losses and waste generation, are one of the obstacles. Their causes are analyzed and systematized at each stage of the value chain. It has been established that the post-harvest stage is characterized by a high level of losses and the formation of by-products - up to 70%. The deterioration of the quality and safety of fish at this stage contributes to the loss of an important source of complete protein in the diet, due to the physical withdrawal of products from circulation. The solution to the problem must be comprehensive, covering all links in the value chain.
