The problem of food safety of the population has become a subject of close attention from the world community since the 70-ies of the XX-th century. In the XXI-st century the problem of food safety of Russia became very topical in connection with the transition of agriculture to market economy and the necessity of studying and estimating of agronatural potential of Russia and its regions, especially with the conditions of extreme agriculture.
