The aim of the research was the analysis of modern trends in the production and consumption of dairy products and the factors affecting their formation. Studies have shown that the service station on the production of dairy products are influenced by demand, availability of raw materials, the level of technology, product range, region of milk supply and region of consumption, the price of raw materials, etc. In the formation of the range of dairy products should take into account these factors in order to adequately provide the population with these products, taking into account their shelf life, seasonal demand, the capabilities of enterprises and the availability of raw materials. Milk and dairy products are the most important component in the structure of nutrition of the population of all age categories, which has good growth potential in the short and long term.
