Problems related to the health of the nation will never lose their relevance. Healthy nutrition will always be relevant, especially at the present time, when technologies are trying to replace natural raw materials with synthetic analogues, increasing production volumes and significantly extending shelf life. These products will certainly solve the problem of lack of food resources, but they will not make up for the usefulness of natural products. Therefore, technologies should also develop along the way of obtaining natural and environmentally friendly food products that correspond to the health formula, in conditions of advanced production achievements and growing needs. This article discusses the production technology of environmentally friendly dairy products by sublimation of specialized purpose with functional properties for sports and general nutrition. The presented dairy products contain essential fatty acids, vitamins, bifidobacteria, a balanced fatty and amino acid composition, in addition, they have a long shelf life. As a result of the production inspections of the developed technologies in the conditions of a dairy enterprise, as well as the results of comprehensive studies of the quality and safety of products, it was concluded that they could be included in the diets of people who are under conditions of increased mental and physical stress, as well as for the prevention of diseases.
