Development and improvement of industrial veterinary and sanitary control in the production line of semi-finished meat products at MK Aleksandrovsky LLC in the Republic of Khakassia

The purpose of the study was to conduct a veterinary and sanitary examination using modern methods of monitoring food safety and quality, including optimizing the assessment of the safety and quality of meat products. It was necessary to compare the used express test systems with new ones in order to identify ways to optimize production. To achieve this goal, the following tasks were set: to conduct an express microbiological study of semi-finished food products using various test systems; study physicochemical and microbiolo-gical methods of meat control; analyze standard veterinary and sanitary examination procedures in order to optimize microbiological safety assessment. The work used express test systems of various types, including Rapid 20E, Api Listeria and the domestic system "RAPID-ENTERO - 200", for the rapid and effective detection of pathogenic microorganisms. The materials and methods of the study were based on the systematic application of scientific methods, including the analysis of meat samples using test systems and standardized diagnostic methods. The analysis of the results was carried out using the Statistica 12.0 program using the ANOVA method and Student's t-test. The data obtained made it possible to develop new methodological approaches for assessing product quality and optimize the safety control system at the enterprise.
