The article presents the results of research on the development of formulations of alcoholic beverages (liqueurs) from use as flavouring components of herbs and peppermint rhizomes of ginger. The nature of the influence of the special characteristics of peppermint and the mass fraction of ginger in the recipe on consumer properties of drinks.
