The technology of receiving the native juice of plantain big is developed, are established optimum concentration of phytocomponents in juice and the main indicators of quality. The phytochemical analysis of native juice by a spectrophotometry method for establishment the quantitative content of polysaccharides is carried out. The validation assessment of a method on indicators on precision and correctness is carried out. Anti-inflammatory properties of juice are established.
