The rational use of bone raw materials for obtaining meat mass, by hot method and a rotating drum, has been studied. Chemical analyzes and the yield of meat mass and broth were carried out. A technology has been developed for boiled sausages of the 1st grade using meat mass instead of trimmed meat.
