Assessment of the initial material for breeding brewing barley

Despite the sufficient number of national barley varieties (more than 100), today the production of high-quality brewing raw materials does not meet the needs of production (the need for raw materials is about 2 million tons). This situation is aggravated by a further increase in demand for barley grain for brewing, which is made up for by imported raw materials. The breeding work of the FSBSI “Omsk ASCˮ results in brewing barley varieties included in the State Register of the Russian Federation (Omskiy 90 and Omskiy 100), a new promising variety Omskiy 102 is on the SSI. The total sown area occupied by spring barley is 310 thousand hectares, the share of varieties of the FSBSI “Omsk Agrarian Scientific Center” is 85%. The purpose of the research is to identify promising genotypes of brewing barley in the breeding material of the FSBSI “Omsk Agrarian Scientific Center”. The studies were carried out from 2017 to 2020 in the southern forest-steppe of the Western Siberia. The object of the research is the genotypes of spring barley of brewing direction in the selection material of the FSBSI “Omsk Agrarian Scientific Center”. Biochemical assessment of grain quality for brewing was carried out jointly with FSBSI Federal Research Center “Nemchinovkaˮ in accordance with GOST 5060-86. The classification of multivariate observations is carried out by the cluster method. As a result of studies of brewing qualities, the studied barley samples were divided into 4 clusters. For further study, varieties of the first cluster are recommended Sasha × Getman (1), Omskiy 90 × Margret, Omskiy 95 × Despina, which meet the requirements of GOST for brewing barley: mass fraction of protein (11.4-11.9% respectively); saccharification time (10.0-15.0 minutes); glassiness of malt (0.0-2.0%); mass fraction of starch (55.4-57.8%) and are characterized by increased productivity (5.31-6.21 t/ha). The studied genotypes more fully meet the requirements of brewing industry.
