Current trends in the development of the milk market and dairy products in the Krasnoyarsk region

The article is devoted to the study of the dynamics and modern problems of milk and dairy production in the Krasnoyarsk Territory. Based on the analysis of statistical information, a long-term trend in the reduction of the dairy herd of cows was revealed, which in 2021 could no longer be compensated by the growth of their productivity, which led to a decrease in the volume of milk received in the region. Accordingly, the level of self-sufficiency of the region with dairy raw materials has also decreased. The consumption of milk and dairy products per capita remains below the recommended norms, which is largely due to a decrease in real incomes of citizens and a change in consumer taste preferences. In the processing industry, there is a restructuring of the nomenclature and production volumes of dairy products to meet changing demand - a decrease in the production of liquid milk in favor of cheeses and high-fat products. Exports are reviving in the industry. The problems of high cost of milk production and low utilization of production capacities of processing enterprises remain relevant. The solution of the identified problems is possible only as a result of joint actions of business and the state and should be of a comprehensive nature - be aimed at increasing milk production while reducing its cost and at the same time contribute to increasing the real incomes of the population.
