Public catering enterprise sector is a perspective economic industry, developing with rapid pace and highly sought by consumer market. Identifying resources availability and concept “potential", the authors distinguish labor, technical, organizational, property, financial and other potentials which determine the ability of the enterprise to reach stated objectives. At the moment there appear such tendencies of food-service industry as catering, franchise, expansion of coffee houses, club restaurants, musical cafes, etc.
