Bioenergetic assessment of the level of contaminants in sheep slaughter products

Currently, there are many methods for determining the content of contaminants in food products (muscle tissue, internal organs and other tissues), which can only be used after the slaughter of animals; The disadvantage of these methods is the impossibility of in vivo determination at an early age of the degree of accumulation of contaminants in the body of animals in order to assess and correct the environmental safety of future animal raw materials. The aim of the research was to study the content of contaminants - arsenic As, cadmium Cd, copper Cu, lead Pb, zinc Zn, in the body of sheep with different bioelectrical activity of surface localized biologically active centers and to develop a simple method for in vivo physiologically based assessment of the accumulation of these contaminants. The number of contaminants in samples of the liver, longissimusdorsi muscle and femurs of rams of the Romanov breed at the age of 6-6.5 months with different levels of bioelectric potential of superficially localized biologically active centers was studied. In experiments it was found that in animals with a higher concentration of heavy metals and arsenic in the organs, the average bioelectric potential of the centers is significantly higher than in animals with a low average bioelectric potential of the centers. The highest concentrations of contaminants were recorded in the bone tissue of animals with a lower bioelectric potential of the centers, which significantly differed in this indicator from rams with a higher average bioelectric potential. As a result of the research, an inverse correlation was established between the average level of the bioelectric potential of superficially localized biologically active centers and the content of contaminants in the body of the Romanov breed sheep grown in the Livensky district of the Oryol region. The proposed method for rapid assessment of the degree of accumulation of contaminants in the body of sheep allows at an early age and in a timely manner to take measures to adjust the concentration of contaminants in slaughter products.
