The article is devoted to comparative assessment of the efficiency of the electron accelerator is at work in one of two modes - electron and conversion x - rays when irradiated dry spices and seasonings (black pepper, onion powder and dry minced parsley leaves), contaminated by microorganisms. It is established that processing of spices two types of radiation showed more effective inhibitory (x-ray) radiation on the sanitary-indicative microorganisms.
