Street food as a potential heritage of Vietnam’s gastronomic culture

In Vietnam, the pedestrian zone exists as a unique multi-dimensional cultural space. The sidewalk is not only responsible for color rendering in the overall urban image and fulfilling its main functions, it is also a place for small business economic activities, a unique art space and a vibrant space of memory. This is where street food originated, showcasing the characteristics of the culinary culture of the region, province and city of the country. Each dish is presented in ready-made or processed form, served on the spot according to the customers’ request, very varied and attractive with many different tastes. In large cities there are more stalls, mobile shops, creating a colorful picture of gastronomic culture. This study aims to investigate the role of Vietnamese street food culture as a potential heritage that determines the spread of gastronomic culture and the development of Vietnam’s tourism economy.
