The article contains some data on peculiarity of temperature adaptation research on some mucus shell intestines enzymes among acipenceriformes order representative (beluga, stellate sturgeon, sterlet, Russian sturgeon and paddlenose), historically formed in different conditions. It was proved, that temperature adaptation of fish acipenceriformes species digestive system occurs due to rebuilding of enzyme system. The established adaptation characteristics are connected with species biology evolved in different environmental conditions.
