Veterinary and sanitary assessment of highly productive cows’ milk

Provision of the country with quality products is closely connected with the development of animal husbandry. The solution to the problem of providing the population with dairy products largely depends on the efficiency of dairy farming and fulfillment of its potential. Nowadays, main challenges in dairy farming are to increase the productivity of cows and to improve the quality of milk which characterized by the share of fat, protein and dry matter. The aim of this paper is to determine the quality of raw milk in КT “Zenchenko and K”. To achieve that, we studied the Holstein-Friesian and Simmental cows’ milk in the North Kazakhstan region. Organoleptic indicators, which are very important in the sanitary assessment of milk quality (smell, taste, color, texture), were identified. These indicators fluctuate under the influence of various factors, as a result, milk faults and deterioration of its technological applicability can be observed.
