The effect of the interaction of casein with fats on the proteolytic activity of pancreatic juice was studied in an experiment. It was found that casein in the absence of bile acids, adsorbed on the surface of fat droplets, can interfere with the hydrolysis of both sunflower oil and pancreatic tributyrin lipase.
