The results of the study of the effect of a protein feed additive based on insects on veterinary and sanitary indicators of poultry meat are presented. The experiments were carried out in the Republic of Tatarstan on the basis of the Kazan SAVM. The experiments were carried out on quails, which were divided into a control and 6 experimental groups of 10 individuals each. Birds of the 1st, 2nd and 3rd experimental groups, in addition to the feed, received larvae of the Black soldier in dried form at a dose of 1, 3 and 5%, to the dry matter of the feed. Quails of groups 4, 5 and 6 received larvae of the Black soldier in natural form in the amount of 4, 12 and 20%, to the dry matter of the feed. Veterinary and sanitary inspection of the carcasses of birds of the experimental and control groups revealed that the carcasses correspond to fresh meat, while visually the carcasses of experimental quails were larger than control analogues. During the organoleptic evaluation of meat and broths, it was found that the tasters preferred meat and broth prepared from poultry meat, in the diet of which larvae were introduced in their natural form in an amount of 12% to the dry matter of the feed. Differences in the concentration of hydrogen ions in the samples of poultry meat participating in the experiment were insignificant. Bacterioscopy of meat showed that the differences in the number of microorganisms in the field of view of the smear-print did not exceed 10%, and was 5 times lower than the maximum permissible values. Based on the above, it can be argued that the quail meat of the experimental groups corresponded to fresh meat according to organoleptic, physico-chemical and bacteriological parameters. The best result in terms of taste was the meat of birds of the 5th experimental group, in the diet of which the larvae of the Black soldier fly were introduced in natural form in an amount of 12% to the dry matter of the feed.
