Influence of helminth invasion on sensitizing properties of tissues and processing products of the Baikal omul

Fish and fish products are an important group of products in the nutrition of modern humans. At the same time, fish can be a source of helminth infection. The aim of this study was a comparative analysis of the severity of the delayed-type hypersensitivity reaction with the introduction of extracts obtained from the muscle tissue of omul of the Selenga population, invaded by D. dendriticum plerocercoids, fish semi-finished products and the finished product - fish cutlets obtained from omul fillet of varying degrees of invasiveness. The sensitizing effect of the studied extracts was determined, which depended on the degree of infection of omul. The extract from plerocercoids isolated from invasive omul had the greatest effect. From omul fish fillet of various experimental groups, minced meat and fish cakes were made according to a traditional recipe. After the temperature treatment of the product (steaming) with the introduction of the extract from ready-to-eat cutlets, the delayed-type hypersensitivity reaction index decreased. The data obtained indicate the relationship of helminth invasion with the severity of the sensitizing properties of extracts from tissues of invasive fish. «School» cutlets made of fish fillet of various degrees of invasiveness showed a similar effect and relationship, however, the severity of the reaction was slightly lower.
