The analysis of the factors determining the physiological significance of bread in the human diet is made. The dependence of the development of nutritional-dependent diseases on the types and varieties of flour used in the production of bread and bakery products has been established. The expediency of the enrichment of varietal wheat flour with essential and minor ingredients has been established.
