Effect of lipids on the probiotic concentrate quality

The article presents the results of the analysis of fatty acid composition of bacterial cells cultured with seals’ fat. The atherogenic effect of bifidobacteria was found out. A change in lipid profile and pronounced cholesterol metabolizing effect of probiotic microorganisms indicates a high bio-corrective potential of bifidobacteria concentrate cultured with the seals’ fat.
