The influence of malonic acid on meat quality and succinate dehydrogenase activity of broiler-chickens under conditions of dark stress

The article presents the results of the study of hydroxyproline and tryptophan content and the activity of succinate dehydrogenase in pectoral and femoral muscles of broiler-chickens under conditions of dark stress. It is shown that malonic acid prevents collagen accumulation in the muscles and normalizes the activity of Krebs cycle enzyme.
