Influence of some food components on the activity of ortho-diphenol oxidase of the flax

We defined kinetic parameters of the catalytic activity of the ortho-diphenol oxidase of flax in five systems: with citric acid, with sodium acetate, with sodium chloride, with sodium thiosulfate and with sodium carbonate. For all the systems we built linear kinetic graphs in the Lineweaver-Burk plot. We also calculated Michaelis constants as well as catalytic constants and maximum speed of the enzymatic reactions. We revealed the changes in the mechanism of the biocatalytic reaction. While administering sodium acetate, sodium carbonate and sodium thiosulfate we observed pseudoactivation of Va type; administration of sodium chloride and citric acid activated two-parameter mismatched type IIa.
