The influence of sodium selenite on dynamic viscidity of protein clots

The influence of sodium selenite on dynamic viscidity of protein clots is studied. On the basis of the experiment the mathematical model of rheological behavior of objects is picked up. It is established that the studied liquids belong to non-Newtonian thixotropic liquids. For the quantitative description of current of clots a thixotropic index is determined, influence of sodium selenite is studied on the thixotropic index of current. Curve currents in coordinates "viscosity - a deformation gradient” are analysed. It is shown that the structure improves with the addition of sodium sulfate to the culture medium of bifidobacteria Bifidumbacterium Adolescentis DSM 20083, the effective viscosity and thixotropic index of the protein clumps increase. It is found that the degree of recovery of clot structure for all the studied concentrations of sodium selenite has a greater value in comparison with the control, therefore, it has the greatest ability to restore the structure, that positively influences the structure of the clots during storage.
