Influence of autoselection on exopolysaccharide biosynthesis and on adhesion activity of microbial consortium

It is shown that the formation of kurunga microbial consortium by kefir fungi and thermophilic lactic acid bacteria autoselection method include mechanisms that activate the synthesis of exopolysaccharides (EPS). EPS synthesis starts from the first hour of autoselection and the most concentration is in the stationary phase. Changes in the dynamics of EPS coincide with the dynamics of lower pH and processes of microflora self-regulation. Increase in temperature up to 30 0C accelerates the change of the active acidity of the medium and the rate of EPS accumulation. Autoselection conditions contribute to the adhesive properties of the microbial consortium.
