The article presents the results of scientific research on the compatibility of the strain Lactobacillus helveticus 35-1 with Propionibacterium shermanii AC 2503. The authors selected the optimal conditions for cultivation of symbiotic yeast and studied its biochemical activity. A technology of combined bacterial concentrate in liquid form with high antimutagenic and cholesterol metabolic activity is worked out.
